First, ensure that you are in Sign & Edit.

Then, select Redact. 

You will be given two options: Blackout or Whiteout.

Select your preference, then click and drag over any section to redact.

To remove, click on the gray X at the top right corner.

Please keep in mind that any redaction will become temporarily invisible if you switch to the Fill Out Form mode.
